I don't generally use the addons - I usually like to install the scripts myself. However, addons which are likely to make me buy are ones which are not available for free. So if you're actually adding value to the hosting plan, that's what's might make me buy. Also I guess it is useful to have an autoinstaller for scripts which are extremely difficult to install.

I haven't had to pay for hosting for a long time, but if I was going to buy hosting, scripts would almost certainly play no part in my decision. Things I would look for would be utilities that make managing my account easier - a good control panel, with things like phpMyAdmin included. Shell access is something I could not live without, but as a server admin I would recommend that you don't include that for customers as it is a huge security hole.

Something I've found is that it is important to install modules / libraries that customers ask for - it takes almost no effort to install new software, and it makes customers happy when they get what they ask for.
